I love testing out and developing new vegan recipes, but when the inspiration strikes, I also enjoy writing about my life experiences. Like all of our lives, some of what I’ve lived is joyous, some is thrilling, some is heart wrenching… and some is downright bizarre. But everything below is true.
Training Yourself… Racing For Others
This past fall, when I was going through some personally difficult times, I went camping with my Dad in Acadia up in Maine. I ran a half marathon, hiked a few mountains, ate some delicious vegan food, and had a great time with Dad. I had such a great time that I was inspired to write a 40-page account of our trip, as well as what Dad has meant to me over the years.
